The small green Tsounati olives are the “noble ones” among the olives. They have a slightly nutty taste, are  small and suitable for nibbling. These olives are high in vitamins and are rich in healthy nutrients. The harvest of these olives takes 6-7 months, as the usual harvesting techniques cannot be implemented with these olives, the tree must not be damaged. The olives ripen on the tree and then it begins to slowly shed the olives. The olives are collected by hand.
