The Early Harvest unfiltered extra virgin olive oil from Thasos is among the rarest and highest-quality olive oils in its category. It is produced from the first harvest of the season, using only carefully handpicked, still-green olives that are harvested between mid-October and mid-November and gently cold-pressed within just a few hours.
As early harvest oil requires roughly twice as many olives as conventional extra virgin olive oil, production is naturally limited – while its nutrient density is exceptionally high.
With an acidity level of just 0.25–0.45%, it represents absolute top quality: rich in polyphenols, unfiltered, and pure in its natural structure. In terms of taste, it impresses with a vibrant, fresh, fruity profile, an elegant bitterness, and a distinctive peppery finish – the signature of true early harvest oils.
The high concentration of oleacein and oleocanthal also makes this oil a valuable addition to a conscious diet.
