
Souvlaki – A Greek Classic from the Grill
Juicy, flavourful and wonderfully Mediterranean.
Souvlaki is one of the true classics of Greek cuisine. Tender pork, aromatic spices, good olive oil and a splash of lemon create its distinctive flavour – simple, traditional and incredibly delicious.
Ingredients for approx. 4 servings

800 g pork, e.g. pork neck

3–4 tbsp extra virgin olive oil

2–3 tbsp Souvlaki seasoning blend

Juice of half a lemon

A little Floros untreated sea salt with lemon & mountain thyme

Wooden or metal skewers
Preparation
1. Prepare the meat
Cut the pork into evenly sized, bite-sized cubes.
2. Prepare the marinade
Mix the olive oil, Souvlaki seasoning blend and lemon juice together. Add the meat and toss thoroughly until evenly coated with the marinade.
3. Marinate
Cover the meat and leave it to marinate in the refrigerator for at least 1 hour. For an even more intense flavour, allow it to marinate for several hours.
4. Prepare the Souvlaki skewers
Thread the marinated pieces of pork closely onto wooden or metal skewers.
5. Grill
Grill the Souvlaki skewers over high heat, turning regularly, until the meat is beautifully browned on the outside and fully cooked while remaining juicy on the inside.
6. Serve
Season the finished Souvlaki skewers with a little Floros untreated sea salt with lemon & mountain thyme and drizzle with fresh lemon juice to taste.
Tip: Serve with Tzatziki, Greek village salad, pita bread or crispy Greek-style roasted potatoes.
