
Moist Apple Cake with Mild Olive Oil
Wonderfully moist, beautifully aromatic, and made entirely without butter.
Mild olive oil, fresh apples, and a delicate hint of cinnamon make this simple apple cake especially moist and delicious. An easy recipe with a Mediterranean touch, perfect with coffee or tea.
Ingredients

4 apples

1 cup (approx. 200 ml) mild olive oil

2 cups sugar

3 cups flour

4 eggs

1 teaspoon cinnamon

1 packet baking powder

1 packet vanilla sugar
Important: Always use the same cup to measure the olive oil, sugar, and flour.
Preparation
1. Prepare the apples
Peel the apples, remove the cores, and cut them into small pieces.
2. Prepare the batter
Beat the eggs, sugar, vanilla sugar, cinnamon, baking powder, flour, and mild olive oil together until you have a smooth, creamy batter.
3. Fold in the apples
Gently fold the prepared apple pieces into the batter until evenly distributed.
4. Bake
Pour the batter into a prepared cake tin and bake in a preheated fan oven at 180°C (356°F) until the cake has developed a deep golden colour.
5. Check if the cake is done
Insert a toothpick into the centre of the cake. If raw batter sticks to it, the cake needs a little more time in the oven.
The toothpick may still come out slightly moist – the apples naturally keep the inside of the cake wonderfully soft and moist.
A Little Tip
Allow the apple cake to cool slightly before cutting. This gives it time to set while keeping it wonderfully moist thanks to the apples and olive oil.
