Our Early Harvest Extra Virgin Unfiltered Olive Oil is made from early-harvested, still-green olives and gently processed by first cold pressing shortly after harvest. It is unfiltered, naturally rich in polyphenols and has a particularly low acidity of 0.25–0.45%.
 
Its early harvest gives it an intensely fruity flavor, pleasant bitterness and a characteristic peppery finish.
 
Because early-harvest olives produce a lower yield, this distinctive olive oil is available in limited quantities.
