Gemista – stuffed peppers and tomatoes – are a classic of Greek cuisine and are traditionally prepared with a flavourful filling of rice, herbs and vegetables.
The carefully balanced blend of mint, basil, tarragon and oregano gives the filling its Mediterranean, typically Greek flavour. The Spice Blend for Gemista is suitable for both the classic vegetarian version with rice and a heartier version with minced meat.
Easy Preparation
Simply mix the spice blend into the prepared rice filling, stuff the tomatoes or peppers and bake in the oven. A drizzle of Elliniki Gi Extra Virgin Olive Oil rounds off the dish beautifully.
