The early harvest results in a higher concentration of valuable nutrients, requiring nearly double the amount of olives compared to standard extra virgin olive oils, which makes production limited.
With a low acidity of 0.25 to 0.45, its quality remains remarkably high. The flavor is bold, offering a balanced combination of pleasant bitterness and spiciness, complemented by a fresh, fruity aroma.
The oil is rich in two important bioactive compounds: oleacein, known for its antioxidant properties, and oleocanthal, which has strong anti-inflammatory effects. The bitterness on the tongue reveals the presence of oleacein, while the peppery sensation in the throat after swallowing is a sign of oleocanthal.
